How a night runs

There is nothing you need to know before you arrive.

The things people ask before they book.

There is no menu. What if there is something I do not eat?

Tell us when you join the list. Allergies, shellfish, anything at all. The chef builds around it and you will never be asked again on the night.

Will I still be hungry?

No. Twenty courses is a full meal, and it builds from light to rich the whole way through.

How long does it take?

About two hours. One sitting, so the room is never turned around you.

I do not know the etiquette.

There is nothing to learn. The chef sets the pace and tells you what each piece is. Use your hands.

Why is it so hard to book?

Ten seats a night. That is the whole restaurant. The list is the only way in.

What if I am late?

The meal starts on time because the fish decides, not us. Come early and have a drink.
